“Gobhi paneer kofta” recipe

Combination of gobhi and aloo is one of very famous
dishes. Almost everybody like aloo gobhi with gravy or without gravy, which
makes it popular enough to be cooked in every Indian house. I had tried to make
this combination in much more delicious and tasty manner. When we start frying
gobhi to make it into kofta, it becomes irresistibly tasty. More yumminess in
this recipe comes by adding small paneer cubes in kofta. You can replace paneer
by kaju or kismis. But paneer makes this dish too attractive and softer to eat.
This kofta with gravy is just heavenly delicious and goes very well with pulav.
Now let’s prepare it quickly.

Cinnamon stick
3 teaspoon oil
1 star anise
1 tejpatta
1 cup milk and cream
Oil for deep frying
Salt as per your taste
Kofta Ingredients:

1/4 cup gobhi (Cauliflower) grated
|
½ cup potatoes(boiled)
|
6-7 small cubes of paneer
|
1 teaspoon garam masala powder
|
1/4 teaspoon cumin powder
|
½ teaspoon red chili powder
|
2 teaspoon corn flour
|
¼ teaspoon black paper powder
|
¼ teaspoon chaat masala
|
1 teaspoon coriander leaves(finely chopped)
|
Salt as per your taste
|
Gravy Ingredients:
|
4 tomatoes
|
1 teaspoon ginger garlic paste
|
2-3 green chili
|
¼ teaspoon food color
|
1 teaspoon garam masala powder
|
1 teaspoon coriander powder
|
Kitchen utensils required:
- 2 non-stick pan (I prefer: Vinod Zest Non- Stick Friendly Pan)
- 2 Spatula (I prefer: PINDIA Wooden Curved Spoons)
- 22 bowls (I prefer: Borosil Mixing Bowl)
- 1 Mixer-grinder( I prefer: Prestige Hero 550- Watt Mixer Grinder)
- 1 Grater (I prefer: Pearl Store Easy Grater)
- 1 Water jug
Step by
step procedure:
To make gravy
Step-1 Heat nonstick deep fry pan, add oil,
cumin seeds, cinnamon stick, star anise,
tejpatta. Now make fine paste of all
the masala ingredients in a grinder. Add masala paste in pan, cover it with lid
and cook it for 4-5 minutes at low flame.
Step-2 When masala is cooked well then
at low flame add milk (slowly with continuous stir) and let it boil once. When
it is cooked then add salt, water and let it cook for 2 minutes on medium
flame.
Prepare kofta’s
Take fry pan then add oil, when oil become hot then add grated gobhi, cover it and let it cook for 3-4 minutes on low flame. Make sure that there is no moisture left in gobhi. Now add boiled and meshed potatoes to it so that moisture of potato is also removed. Now transfer it in a bowl and add all other kofta ingredients( except paneer cubes) now it keep aside it for 5 minutes. Take out bowl, now make small bolls of it and then insert very small cube of paneer in the kofta and then close it. Now deep fry kofta’s in a fry pan.
Take fry pan then add oil, when oil become hot then add grated gobhi, cover it and let it cook for 3-4 minutes on low flame. Make sure that there is no moisture left in gobhi. Now add boiled and meshed potatoes to it so that moisture of potato is also removed. Now transfer it in a bowl and add all other kofta ingredients( except paneer cubes) now it keep aside it for 5 minutes. Take out bowl, now make small bolls of it and then insert very small cube of paneer in the kofta and then close it. Now deep fry kofta’s in a fry pan.
Step-3 Now add kofta’s to the gravy.
Garnish it with finely chopped
coriander leaves.
Enjoy it with paratha, rice, pulav…….!!
Tips:
- Adding corn flour and potato are important, because it bind your kofta's. Also make sure that there should be no moisture in kofta's before frying it.
- Add very less amount of water for making thick gravy.
- Add kofta's in the gravy at the time of serving otherwise it will soak all the gravy.
- Cook masala very well.
- Always add milk on low flame and slowly with a continous stir otherwise milk will curdle.
