“Besan Tikka with spicy gravy” Recipe

This time, I came with more traditional recipe,
often called besan tikka (kharera)...something which is really delectable and
relatively spicy when made but it takes “time” to come in its real form and
taste…This recipe is my mother-in-law favorite. She is fond of preparing it. Combination
of besan tikka along with spicy gravy goes very well with plane rice. This
recipe was most awaited one that I thought to share with you all…so let’s
prepare it with patience.
Ingredients:
1Cup besan (chickpeas flour)
1 large onion(finely chopped)
2-3 fenugreek seeds
4 teaspoon oil
¼ teaspoon food color
1 cup water
Salt as per your taste
Gravy Masala Ingredients:

3 small teaspoon coriander seeds
|
2 black cardamom
|
1/2 stick cinnamon
|
2 black cloves
|
9-10 Black Pepper seeds
|
8-9 garlic clove
|
3-4 red chili
|
1 teaspoon turmeric powder
|
Kitchen utensils required:
- 2 non-stick pan (I prefer: Vinod Zest Non- Stick Friendly Pan)
- 2 Spatula (I prefer: PINDIA Wooden Curved Spoons)
- 15 bowls (I prefer: Borosil Mixing Bowl)
- 1 Mixer-grinder( I prefer: Prestige Hero 550- Watt Mixer Grinder)
- 1 non-stick tava (I prefer: Vinod Cookware Dosa Tava)
- 1 Chopper (I prefer: Genius Nicer Dicer Plus Multi Chopper Vegetable Cutter Fruit slicer)
- 1 Water jug
Step by step procedure:
Make fine paste of gravy masala ingredients in a grinder.
To make Besan
tikka:
Step-1 Take deep fry pan. Heat deep fry pan and add oil in a pan. Let it become
hot.
Step-2 When oil is hot then add ¼ part of gravy masala paste to it and then
cover it with lid. Now let it cook nicely for 2-3 minutes on low flame.
Step-3 Take a bowl and mix 5 spoon of
besan and water to form thin paste of it.
Step-4 Now add this paste with the
cooked gravy masala in a pan. Here at this time, flame will be at low and you
have to continuously stir it for good result. When besan with masala is cooked
properly then add salt to it and switch off the flame.
Step-5 Now
transfer the besan tikka in a plate (apply oil on the surface of the plate).
Now let it cool down and then cut it in form of any shape of your choice.
Step-6 Take non stick tava. Heat it. Now add 1 teaspoon of oil on it. When oil
become hot then put all the tikka’s on it and then shallow fry them from both
the sides.
To make spicy gravy
Step-1 Heat nonstick deep fry pan, add
oil, let it become hot. When oil is hot then add fenugreek
seeds, onion and then fry it for few seconds. Now when done then add ¾ part of
gravy masala paste, food color and then
mix everything very well, now cover it with lid and cook it for 4-5 minutes at
low flame.
Step-2 When masala is cooked well at low flame then add salt, water and let it cook for 2 minutes on medium
flame.
Step-3 Add beasn tikka and let it cook
for 2 minutes on high flame.
When done,
garnish it with coriander leave or red chilly.
Enjoy it
with paratha or naan or with pulav or plane rice.
Tips:
- Add very less amount of water for making thick gravy.
- Cook masala very well.
