“Choco-chips Cookies” (with all possible tips, do’s & don’ts) Recipe

Ingredients:

2 1/4 cup all-purpose flour
1 cup Brown sugar (powdered)
½ cup white sugar (powdered)
1 ½ cup choco chips
 ¼ cup cocoa powder (optional)
1/2 teaspoon baking soda
NOTE: Don't use baking powder in this recipe.

2 sticks unsalted butter (at room temperature)
NOTE:  1 stick butter=1/2 cup butter=4 ounces or 113 grams

2 eggs (at room temperature)
2 teaspoon pure vanilla extract
1 baking tray or thick surface steel thali

For these cookies, the two main ingredients we need to know about are: BUTTER & SUGAR. If you don’t follow the exact science of baking and amount of ingredients used in this recipe then your cookies will be all waste result. As I told you butter & sugar are two main ingredient to know about..let’s learn about their use in the recipe & also other things to take care about. Always make sure that if you use less butter in this recipe then your cookies will result in caky like texture. If you want soft & chewy cookies then use more amount of butter for this recipe. Also use of sugar make a large difference: for perfect cookies you need to use white sugar as well as brown sugar sugar in the amount as mentioned above.

                                          Step by step procedure:


Prepare choco chips cookies:

Step-1 Take bowl and add butter (at room tem) and powder sugar (white & brown). Whisk it with either electric beater or with hand Whisk it for at-least 2 min, till cream and fluffy stage.

Step-2 Now add eggs one by one.

Step-3  Add vanilla extract.

Step-4 whisk it once using very slow speed.

Step-5 Now in a large bowl add maida, cocoa powder (optional), baking soda. Take all dry ing into a Strainer, strain all into the bowl containing butter and powder sugar mix.
Step-6 Add lots of choco-chips into it. Now make soft dough of it(don’t knead too much, just cut and fold it until done).
Note- just combine it, don’t over mix here, it can result in hard and tough cookies.

Step-7 Keep it in freeze for at least 1 hour (optional in winter season).

Step-8 Now take out the bowl and knead it once again. Make equal size small round balls using the dough. Put butter paper on baking tray. If using thali then grease it with oil or ghee, then put one by one few of small round shape cookie balls on the tray or thali. Place them with some distance.  

Step-9 Now put that thali in refrigerator before going to start your microwave for preheat. Don’t take it out till preheat of microwave is done.

Preheat microwave
Start your microwave, put medium rack into it now press convection button. Set temperature at 180 degree. Now start  preheat. It will beep when microwave is preheated.

Step-10 Take out thali from the refrigerator and immediately put it inside microwave and bake cookies for 8-14 minutes. Check after 10 mins.

Step-11 When done, take out choco chips cookies’s. Immediately put extra choco chips on all sides of each cookies so that for extra taste as well as look. let it cool completely in the same tray or thali. When cooled completely, take out it and keep them in an air tight container. Enjoy the perfect homemade cookies.

Tips, do’s & don’ts:

  • If you use Baking powder instead of Baking soda then it will give more caky texture i.e soft and not crunchy. Also it will puff while baking. So avoid using baking powder for cookies preparation.
  • If you use both i.e ¼ teaspoon baking powder and ¼ teaspoon of baking soda then cookies will be crisp at their edges and soft in middle.
  • If you skip using brown sugar i.e you use all white sugar then your cookies will get very flat. Since brown sugar in cookies is used because baking soda requires an acid such as brown sugar to react with it.
  • If you use all brown sugar then your cookies will turn too soft and thick.
  • Don’t beat too much to eggs in the butter sugar mix.
  • If you use more all-purpose flour then it will result in more crumbly dough and very little spread. Hence the cookies will be small in shape and undercooked and thick.
  • Avoid using melted ghee for cookies preparation. If using, use semi solid ghee.
  • Add a little flour to the dough.
  • If you add melted butter i.e you don’t cream the butter & sugar then it will result in flat, cracked cookies which can be crisp only at their edges after baking.
  • Mix butter with sugar till cream and fluffy stage.
  • If using thali then grease it with oil or ghee, then put one by one few of small round shape cookie dough on the steel thali. Place them with some distance. (i prefer thali bcz i get nice golden color baked cookies at its bottom side too.
  • 24 hours chilling dough (before baking) is must for cookies to be slightly thick dark cookies. Wrap the dough with plastic and put it in refrigerator for rest. Once it is done then unwrap the plastic and make small flat balls out of the dough.
  • Shape your cookies by hand.
  • Place them on a thali or cookie sheet (don’t use non-stick baking tray here as it can result with over browning of the base. Do not overcook thenm as they will expend and spread out.
  • TRICK: Before going to start your microwave for preheat, put that thali (with cookies) in refrigerator. Don’t take it out till preheat of microwave is done. Once the pre-heat is done then immediately take out that thali from the refrigerator and put it inside microwave and bake it for at least 8-14 minutes. Chilled tight ball (not liquidy &soft) will hold the shape, if not chilled before baking then it will result in flat cookies.
  • When done, take out Choco chips cookies’s. Then immediately put extra choco chips on all sides of each cookie so that for extra taste as well as look. Let it cool completely in the same tray or thali. When cooled completely, take out it and keep them in an air tight container.
