Step by
step procedure:
To make White matar chhola
Step-1 Boil chhola in a cooker. Now heat non stick deep fry pan, add
oil. When oil become hot then add cumin seeds, chopped onion and fry them. When
onion is fried then add chopped tomato, coriander powder, garam masala, chaat
masala, salt, chili powder. Now let it fry nicely. Cover lid of pan and cook
it for 3-4 minutes on low flame.
Step-2 When masala is cooked well then
at low flame add boiled safed matar, turmeric powder, tamarind chutney, water, coriander leave.
Cover and let it cook for 2 min on low flame. Chhola is ready for papdi chaat.
Prepare Papdi for chaat
In a bowl
add all the dough ingredients. Mix everything very well and add water to knead
it. Make soft dough and keep aside it for 20 minutes. Now take it out and make
big size thin roti so that you can cut that roti for making many papdi’s. Take
biscuit cutter or any small glass and cut roti in shape of papdi. Now make holes
with the help of fork. Cover all papdi’s with cloth and keep it at rest for 5
minutes. Now heat oil in deep fry pan and when oil is hot then fry papdi and
then take it out in a plate. Let it cool down.
Prepare papdi chaat
Take a
plate, put papdi, then put boiled and finely chopped potatoes on it. Now add safed
matar chhola that you have prepared initially. Now add cumin powder, chili
powder, yogurt, black salt, garam masala powder, chat masala, coriander powder, finely chopped
onion, green chutney, tamarind chutney, bhujiya namkeen.
When done
enjoy it with tea.
Tips:
- Add very less amount of water in safed matar chhola.
- Always make holes in papdi so that it does not puff up while frying.
