Dhaba style Chhole bhature



Dhaba style "Chhole bhature" Recipe

In this recipe, I had used kabuli channa which is larger than other variety of chickpeas. I prefer it because due to its large size it looks more tempting and nutritious. Chhola prepared by this variety of chickpeas taste much better. So you should also prefer big ones to make this recipe. The only thing you keep in mind is after boiling, chickpeas should be completely cooked.
Now let’s prepare together this tasty recipe :-)

Ingredients: 
1 cup chhola or large chickpeas (soaked in water for overnight)
2 pinch baking soda
2 large onions
1 tomato
1 star anise
1 small stick Cinnamon
2 teaspoon oil
1 cup water
Salt as per your taste

Masala Ingredients:
2 small teaspoon coriander seeds
1 small teaspoon fennel seed
1 green cardamom
1/2 stick cinnamon
5-6 Black Pepper seeds
8-9 garlic clove
3-4 red chili
1 teaspoon turmeric powder






















Kitchen utensils required:
  • 1 Spatula (I prefer: PINDIA Wooden Curved Spoons)
  • 15 bowls (I prefer: Borosil Mixing Bowl)
  • 1 Mixer-grinder( I prefer: Prestige Hero 550- Watt Mixer Grinder)
  • 1 Chopper (I prefer: Genius Nicer Dicer Plus Multi Chopper Vegetable Cutter Fruit slicer)
  • 2 cooker (I prefer: Prestige Popular Aluminum Pressure Cooker, 3 Liters)
  •  1 Water jug


Step by step procedure:


Boil chhola 

Step-1 Take a cooker, switch on the gas.
Step-2 Now when cooker become hot add chhola, water, salt, baking soda and then cover the lid of cooker and cook it for 7-8 weasels on low flame.
Make sure that chickpeas are cooked properly. Let it cool down.

Make gravy 

Step-1 Heat another cooker, add oil, star anise, cinnamon and fry it for few seconds.
Step-2 Now add finely chopped onion and fry it. 
Step-3 Make fine paste of all the masala ingredients in a grinder. 
Step-4 Now add paste of masala ingredients, chopped tomato in the cooker and mix everything well. Now cover cooker with lid and cook masala for 4-5 minutes at low flame.
Step-5 When is cooked very well then add salt and water. Mix everything well and cover cooker with lid and cook it on medium flame for 3-4 minutes. 
Step-6 When masala is cooked very well then add boiled chhola to it, then add water, salt and cover cooker with lid. Cook it for 5-6 weasels at low flame.
Chhole is ready.

Garnish it with coriander leaves, onion.


Tips:

  •     Don’t add too much water for gravy.
  •    Cook masala’s very well for chhole.
