Mawa raskadam


   "Mawa raskadam" Recipe

Indian sweet dishes are just juicy and loved by every age group. Raskadam is my most favorite one and I can eat multiple at any time. My son literally fight to eat more Raskadam due to its delicious taste. This dish is just awesome but it takes lots of experience to prepare it. Common problem faced in its preparation are sometimes bowl crumbles while cooking or sometimes it become hard from inside. Raskadam should be basically soft and spongy. With lots of experiments here I got just a perfect one. Let's try and prepare mawa-raskadam. 


Ingredients

Saffron - 10 to 12 threads
5-6 pistachio (finely chopped)


Rasgulla Ingredients:
1 liter Milk(cow milk)
2 cups Sugar
3&1/2 cups Water
3 teaspoon Lemon juice
        
Mawa  Ingredients:
1/2 cup milk powder
5-6 teaspoon ghee
4-5 teaspoon milk(as required)
     









Kitchen utensils required:
  • 3 non-stick pan (I prefer: Vinod Zest Non- Stick Friendly Pan)
  • 3 Spatula (I prefer: PINDIA Wooden Curved Spoons)
  • 10 bowls (I prefer: Borosil Mixing Bowl)
  • 1 Chopper (I prefer: Genius Nicer Dicer Plus Multi Chopper Vegetable Cutter Fruit slicer)
  • 1 Water jug






                                           Step by step procedure:

Make rasgulla

Step-1 Take deep fry pan. Heat deep fry pan and add milk. Let it boil on high flame, when milk is boiled then switch the flame to low.
Step-2 Now add lemon juice into milk very slowly and stir it continuously until whey water fully separates. Here you will get curdle milk or chhena.
Step-3 Take muslin cloth or dupatta and pour curdle milk into it and wash the chhena with cold water to get soft chenna for making rasgulla's.
Step-4 Now hang it for 30 minutes so that excess water is removed.

Step-5 Now take out chenna in a bowl and knead it up to 9-10 minutes until you get smooth dough for rasgulla.
Step-6 Make any shape (round, square) of rasgulla from the dough. Prepare all the rasgulla's from the dough.
Step-7 Take a pan, heat it, add water and sugar. Let it boil completely. Now add rasgulla’s to it and then cover lid of pan. Cook it for 15 minutes on medium flame. Finally take out rasgulla’s without syrup in a bowl. Let it cool down.


Prepare Mava at home

Step-1 Take bowl (microwave safe), add milk powder and ghee in it. Mix it very well.
Step-2 Now add very less amount of milk (2-3 teaspoon or more). Mix everything very well.
Step-3 Now put the mixture in a microwave for at-least 2 minutes.
Step-4 Take it out and mix it properly.
Step-5 Again put the mixture in a microwave for 1 minute.
Step-6 Take it out of the microwave and put it in a freeze.

Step-7 When mava is cooled completely then make it smooth by hand.
Step-8 Now add food color to it so that it's color become yellow. Now mix everything very well.

Make raskadam
Take all the rasgulla’s, cut them from middle with sharp knife. Now fill mawa with the help of knife or spoon in middle of rasgulla’s. Decorate all raskadam with saffron sticks and pistachio.


Tips:
  •    You can purchase mawa from the market.
  •   Always wash chenna in a cold water.
