“Matka Kulfi  with falooda” Recipe

It would be just great to have something really cold and sweet to beat the heat of this crouching summer. Kulfi comes as most delicious, traditional and obvious heat busters in such dry season. This is among favorite choices of every age group. My son demands it once a week. Kulfi along with falooda that we get in market are really tasty and yummy…it seems tough but making of falooda is very simple and handy…so let’s join together to prepare this heat-busting recipe.







Ingredients:

Falooda Ingredients:
1/2 cup corn starch
3 teaspoon sugar
Food color(optional)

Kulfi Ingredients:
1 lit milk
½ cup sugar
1 teaspoon green  cardamom powder
2 bread slices
2 teaspoon corn starch
1 teaspoon grated nariyal
4-5 grated pistachio
3-4 grated almonds
2-3 resins























Kitchen utensils required:
  • 2 non-stick pan (I prefer: Vinod Zest Non- Stick Friendly Pan)
  • 2 Spatula (I prefer: PINDIA Wooden Curved Spoons)
  • 6 bowls (I prefer: Borosil Mixing Bowl)
  • 1 Mixer-grinder( I prefer: Prestige Hero 550- Watt Mixer Grinder)
  • 1 Grater (I prefer: Pearl Store Easy Grater)
  • 1 Namkeen maker (I prefer: Stainless Steel Kitchen Press)






                                Step by step procedure:

To make Kulfi:
Step-1 Take deep fry pan. Heat deep fry pan and add milk into it. Let it boil nicely. When boiled then, let the milk to cook on medium flame by continuous stir.
Step-2 When milk get reduced then add sugar into it and give it good mix.
Step-3 In a grinder put bread slices, 1 teaspoon milk, and 1 teaspoon corn starch then grind it to fine paste.
Step-4 When milk is cooked properly then at low flame add paste of bread slice of step-4.
Step-5 With continuous stir cook it for 1 minute on low flame. Now add all the nuts into it and grated nariyal into it.
Step-6 Transfer the kulfi mix into a kulfi mold. Keep it in a freezer for 3 hour then take it out.
Step-7 Take grinder and add kulfi mix into it, grind it for few seconds.
Step-8 Now again transfer the mix into kulfi mold and then keep it in freezer for 5-6 hours. In between half an hour you can insert stick into kulfi.

To prepare falooda
Step-1 In a bowl add corn starch, sugar, water and then make fine paste of it.
Step-2 Take deep fry pan, let it become hot. Now add the paste into the pan. With continuous stir cook it for few minute until you get thick paste. When it is cooked completely then immediately transfer the thick paste into the namkeen maker(use thin hole namkeen plate).
Step-3 Take a large bowl, filled with cold water and few ice in it. Now press the namkeen maker paste into the bowl. You will get falooda at this stage. Now keep that falooda bowl in a freezer for 1 hour.

Tips:

  • By grinding the kulfi mix, there will be no ice in it. This will make good quality of kulfi.
  •   Make sure to continuously stir kulfi mix as well as falooda mix.
