“Punjabi Samosa”



“Punjabi Samosa” Recipe

Samosa is one of the most famous snack of Northern India. This is one of the favorite street food or eaten with taste in restaurant as well. Ingredients used in samosa are easily available in market. Many people in punjab enjoy samosa with sweet red tamarind chutney (recipe given below). The main ingredient used for filling in samosa is boiled potatoes. Adding boiled green peas is optional. Masala used for this recipe varies city to city. If masala used in it is perfect then samosa will taste too good…main reason for samosa being famous is due to its masala…let’s have look on it.





















Ingredients:
Oil to deep fry 

Samosa masala filling Ingredients:
3-4 potatoes (boiled)
3-4 teaspoon green pea (boiled)
1 teaspoon coriander leaves (finely chopped)
1 teaspoon coriander powder
½ teaspoon chaat masala powder
½ teaspoon garam masala powder
1/4 teaspoon coriander seeds(roasted)
½ teaspoon cumin seeds (fried)
½ teaspoon red chili flakes
¼ teaspoon black pepper powder
¼ teaspoon grated ginger
Sat as per your taste

Dough Ingredients:
1 cup all-purpose flour(maida)
Pinch of baking powder
3 -4 teaspoon refine oil or ghee
Salt as per your taste
Cold water(as required)
















Kitchen utensils required:
  • 1 non-stick pan
  • 1 Spatula
  • 15 bowls
  • 1 cooker
  • 1 Water jug


Step by step procedure:

Prepare dough

Step-1 Take bowl, add maida, ghee, baking powder and salt Mix everything very well.

Step-2 Add cold water and knead the dough very well.

Step-3 Keep aside dough for 30-40 minutes in a warm place.
Prepare samosa filling
Step-1 Take cooker, boil the potatoes and green peas. Now take bowl, add boiled mashed potatoes and green peas. Now add other filling ingredients listed above.
Step-2 Now mix everything very well.

Prepare Punjabi samosa
Step-1 Take out bowl of dough. Now take small part (big lemon size) of dough.
Step-2 Now with the help of rolling pin roll it in shape of puri.
Step-3 Cut puri into two half parts.
Step-4 Take one part of puri (shape like half moon) then apply water on the horizontal side i.e at straight line in that part.
Step-5 Now pick that half puri in your hand and then fold and join the two corners by putting one on another vertically.
Step-6 Put small lemon size filling in that and close it very well. Similarly prepare all the samosa’s from the dough and the filling.
Step-7 Heat deep fry pan, add oil to deep fry. When oil is super-hot then add 3-4 samosa’s at a time and switch the flame to low. Cook it from each side. Similarly prepare all samosa’s.

 When done, enjoy it with chaat masala, green chutney, red tamarind chutney, tomato catch-up and tea.

Tips:

  • Make sure to keep flame low to medium flame while frying samosa’s.

1- Prepare green chutney

Ingredients
1/2 cup coriander leaves
2-3 green chilis
2-3 garlic cloves
¼ teaspoon mango powder
Salt and water as you prefer

Method
Take grinder, add all the ingredients of the chutney. Add water and salt as per you like. Now make fine paste out of it. Your green chutney is ready.




2- Prepare Red tamarind chutney

Ingredients
4-5 teaspoon tamarind pulp
1 teaspoon red chili powder
1 teaspoon sugar
pinch of red food color
water as you prefer

Method
Take grinder, add all the ingredients of the chutney. Add water and salt as per you like. Now make fine paste out of it. Your red tamarind chutney is ready.
