“Malai Kofta”



“Malai Kofta” Recipe

Recipe Cuisine: Indian | Recipe Category: Lunch/Dinner
Prep Time: 20 mins    | Cook time: 1 hour     | Serves: 2-3


Ingredients:
1 large onion
1 star anise
1/2 teaspoon cumin seeds
1 small stick Cinnamon
2 teaspoon refine oil
8-9 teaspoon milk with cream
Oil for deep frying
Salt as per your taste
6-7 teaspoon bread crumbs
3 teaspoon maida (all-purpose flour)
Water as required

Gravy Masala Ingredients:
4 tomatoes
3-4 Garlic cloves
1 black cardamom
¼ teaspoon chaat masala powder
1/2 teaspoon red chili powder
2-3 green chili
1 teaspoon turmeric powder
¼ teaspoon food color
1 teaspoon garam masala powder
1 teaspoon coriander powder



     














Malai kofta Ingredients:
5-6 cubes paneer (grated)
1 boiled potato(mashed)
3 teaspoon bread crumbs
Coriander leave(finely chopped)
1/4 teaspoon Red chili powder
¼ teaspoon garam masala powder
Salt as per your taste
















Kitchen utensils required:
  • 3 non-stick pan (I prefer: Vinod Zest Non- Stick Friendly Pan)
  • 3 Spatula (I prefer: PINDIA Wooden Curved Spoons)
  • 20 bowls (I prefer: Borosil Mixing Bowl)
  • 1 Mixer-grinder( I prefer: Prestige Hero 550- Watt Mixer Grinder)
  • 1 cooker (I prefer: Prestige Popular Aluminum Pressure Cooker, 3 Liters)
  • 1 Water jug









                                           Step by step procedure:


To make paneer at home(for malai kofta):
Step-1 Take deep fry pan. Heat deep fry pan and add milk. Let it boil on high flame, when milk is boiled then switch the flame to low. Now add lemon juice into milk very slowly and stir it continuously until whey water fully separates. Here you will get curdle milk.

Step-2 Take muslin cloth or dupatta and pour curdle milk into it and wash it with cold water to get soft paneer for making paneer pasanda. Now hang it for 30 minutes so that excess water is removed.

Step-3 Now take out paneer in a bowl and keep it in a freeze for at least 1 hour so that it is completely set to cut into pieces.

Make Malai kofta
Step-1 First, boil potatoe in a cooker, then take boiled potato and mash it. Now add grated homemade paneer and all other ingredients listed above. 
Step-2 Mix all the kofta Ingredients and make lemon size balls of it.
Step-3 Take small bowl, add maida and water. Make paste of it.
Step-4 Now dip 1 ball in maida paste, then immediately coat the ball with bread crumbs from all the sides. Similarly prepare all malai kofta’s.
Step-5 Now take deep fry pan. Heat it, add oil. When oil become hot then deep fry kofta’s in hot oil.



To make gravy
Step-1 Heat nonstick deep fry pan, add oil, cumin seeds, cinnamon stick, star anise.
Step-2 Now add finely chopped onion and fry it to golden brown.
Step-3 Now make fine paste of all the masala ingredients in a grinder. Add masala paste in pan, cover it with lid and cook it for 4-5 minutes at low flame. 
Step-4 When masala is cooked well then at low flame add water and et it boil for 3-4 minutes.
Step-5 Now add milk and cream (slowly with continuous stir) and let it boil once. When it is cooked then add salt and let it cook for 2 minutes on medium flame.
Step-6 Add kofta’s in the gravy and garnish it with coriander leaves.
Serve hot with naan, plain paratha or enjoy it with pulav..

Tips:

  •  Don’t add too much water for gravy.
  •  Cook masala very well.
  • Always add milk on low flame and slowly with a continuous stir otherwise milk will curdle.
