Punjabi "Sarso Saag" Recipe

Sarso ka Saag is very
famous recipe from Punjab. This gravy rich recipe is made using half green palak
and half green sarso. If you will use only green sarso to prepare the saag then
bitterness of it may spoil your taste. So you need to add palak in it. Adding palak
makes it more delicious and equally nutritious due to its rich iron contents.
This recipe goes well with Makke di roti and if you don’t find Makka in the
market then even you can eat it with plain rice. The masala used in this recipe
should be in very less quantity because the natural taste of saag is just
awesome and that’s what I like about this dish...I usually make it with crunchy
Make ki roti in winter days. Come lets prepare this in my own style.
Ingredients:

Spinach chopped

Mustard leaves chopped

teaspoon sugar

teaspoon Red Chili powder

½ teaspoon
cumin seed
|
1teaspoon
ginger garlic paste
|
1 large
onion
|

tomatoes

teaspoon garam masala
|
½
teaspoon coriander powder
|
1 Green
Chili
|
2
teaspoon Cooking Oil
|
Salt to
taste
|
coriander
leaves finely chopped
|
1 teaspoon
cream
|
Kitchen utensils required:
- 2 non-stick pan (I prefer: Vinod Zest Non- Stick Friendly Pan)
- 1 Spatula (I prefer: PINDIA Wooden Curved Spoons)
- 15 bowls (I prefer: Borosil Mixing Bowl)
- 1 Mixer-grinder( I prefer: Prestige Hero 550- Watt Mixer Grinder)
Step
by step procedure:
Step-1 Heat a deep non-stick pan, add water to it. Now add chopped
Spinach, chopped Mustard leaves, sugar then cover pan with lid and cook it over
low flame for 4-5 minutes.
Step-2 Now put the cooked leaves in a grinder and make smooth
paste.
Step-3 Heat a deep fry pan, add oil. When oil is hot add cumin
seed, finely chopped onion and when onion is fried nicely add ginger garlic
paste and fry it for 1 minute.
Step-4 Make paste of tomato, green chili and add the paste in fry
pan.
Step-5 Add garam masala, coriander powder, red chili powder and
cover pan with lid and cook it for 8-9 min on low flame until masala leaves
oil.
Step-6 Add spinach and mustard leave paste to it and cook it for
3-4 minutes .Add salt as per your taste.
When done add coriander leaves and
cream for garnishing.
Enjoy it with makke di roti, simple
roti or with rice!!
Tips:
- Add sugar to cut the bitterness of sarso leaves.
- Don't use too much masala ingredients for sarso ka saag.
