Amritsari Chicken Masala




“Amritsari Chicken Masala” Recipe

Preparation Time: 3-4 hours | Cooking time: 50 mins     | serves: 2-3







Ingredients:
 
½ kg chicken
1 onion (paste)
1 tomato (paste)
2 teaspoon red chili garlic (paste)
3 teaspoon ghee or refine oil

Marinade Masala Ingredients:
4 teaspoon yogurt
2 teaspoon ginger garlic green chili paste
½ teaspoon cumin powder
½ teaspoon coriander powder
1 teaspoon garam masala
1 teaspoon lemon juice
½ teaspoon food color
Salt as per your taste
½ teaspoon turmeric powder
1 teaspoon red chili powder



                                   


                                              















Step by step procedure:

Step-1 Wash chicken pieces. Make holes in chicken pieces with fork. 
Step-2  Add all the marinade masala Ingredients and mix it very well with chicken.
Step-3 Keep aside it for about 3-4 hours in freeze to marinade.
Step-4 Take out chicken mix and add pinch of red chili powder and garam masala.
Step-5 Take deep fry pan, heat it. Now add ghee or refine oil into the pan. 
Step-6 Now add onion paste and red chili garlic paste into the pan, fry it well.
Step-7 Add tomato paste and cook it on low flame with cover lid.
Step-8 When cooked the take it out from the pan.
Step-9 Into the same pan add 1 teaspoon of ghee, then add all the marinade chicken into the pan and cook it for 6-7 mins on low flame, cover the lid of pan. Stir well in between.
Step-10 Now check the chicken, if there is still water of chicken in the pan then again cook it on low flame for 5-6 minutes on low flame. 
Step-11 When cooked then add all the onion and tomato masala done in step-8.
Step-12 add pinch of food color and salt into it and mix everything very well.
Step-13 Add ½ cup water and let it boil once. Switch the flame to low and add chopped coriander leaves. 

Serve hot with nan, pulav or plane rice.


Tips: 
  • All masala flavors will go inside of chicken by making holes in chicken pieces.
  • Always marinade chicken before using it for this recipe.

“Nan Khatai”



“Nan Khatai” Recipe

Ingredients:

 1cup all-purpose flour
¼ cup wheat flour
¼ cup fine suji or semolina
1 teaspoon baking powder
1/2 cup powder sugar
½ cup butter (at room temperature) or ghee
¼ teaspoon nut-mug powder
¼ teaspoon green cardamom powder
1 baking tray
1 butter paper
2 teaspoon chopped pistachio









                                          Step by step procedure:
Prepare Nan Khatai
Step-1 Take bowl and add butter and powder sugar. Mix it well for at-least 2 min, till cream ans fluffy stage.
Step-2 Now take maida, suji,wheat flour, baking powder, nut-mug powder and cardamom powder in a Strainer, strain all into the bowl containing butter and powder sugar mix. Now make soft dough of it(don’t knead too much, just cut and fold it until done). Keep it in freeze for at least 1 hour.
Step-3 Now take out the bowl and knead it once again. Make equal size round balls using the dough.
Preheat microwave
Start your microwave, put low rack into it now press convection button. Set temperature at 180 degree. Now start preheat. It will beep when microwave is preheated
Step-4 Put butter paper on baking tray. Now out one by one all the nan khatai’s on the tray. Place them with some distance.  
Step-5 When preheat is done then place the tray with nan khatai on it into the microwave and set time of 15-20 minutes. Do check in between.
Step-6 When done, take out nan khatai’s and place it on another wire rack so that it cool completely. When cooled completely decorate it with pistachio, put all nan khatai’s into an air tight container.


Tips:



  • Make sure that balls of nan khatai don’t have any cracks.
  • Mix butter with sugar till cream and fluffy stage.
  • Make soft dough, if required add little milk.
  • Place nan khatai with some distance.
  • You can replace flour with only all-purpose flour.

“Motichur Laddu”




“Motichur Laddu” Recipe

Ingredients                             
Oil or ghee to deep fry 
1 Cup powder sugar
1/4 teaspoon green cardamom powder
¼ teaspoon food color
¼ teaspoon lemon juice
1/4 cup water
½ teaspoon melon seeds

Kitchen Tools Required
Jhara (with fine holes)

Laddu batter Ingredients:
1 cup chick-pea four(besan-coarsely grinded)
½ teaspoon red food color 
½  teaspoon refine oil or ghee
water(as required)

            





           




               
                                     Step by step procedure:

Prepare Laddu batter

Step-1 Take bowl, add besan(coarsely grinded), ghee and food color. Mix everything very well. Make thin batter of running consistency. Cover it and let it rest for at least 30 mins.

Step-2 After 30 mins check it, now it will be little thick so add 1 teaspoon of water to make it running consistency. You need running consistency batter to make boondi(moti) out of the batter.


Prepare moti from batter
Step-1 Take out bowl of batter. Take jhara (with fine holes).
Step-2 Heat deep fry pan, add oil to deep fry. When oil is super-hot (not smoky) then take jhara in one hand and drop one large teaspoon of laddu batter on the jhara and tap it fast into the hot oil. Now immediately take out all the boondi’s from the oil and keep it on a plate. Similarly prepare rest of moti’s from whole batter.
Step-3 Let the moti’s cool down in the plate. Remove excess oil from the moti’s.

Prepare Moti chur Laddu’s
Step-1 Take deep fry pan, heat it. Now add powder sugar, little water, lemon juice, green cardamom powder and food color.Let it boil once. Now switch off the flame(or keep flame at low). Now add all the moti’s into the pan. Mix everything for at least 2 minutes on low or switch off mode of gas.
Step-2 Now switch on the gas but keep flame at low. Cook the laddu mix for 2-3 minutes until it leaves all sides of pan. When done switch off the flame and cover the pan and keep it on rest for 5-6 minutes. Now transfer the laddu mix into the plate and let it completely cool down. Now add melon seeds (few) and make mix in shape of laddus. You can make perfect shape of it after 3-4 hours.
 When done, enjoy it.

Tips:

  • Make sure to cook Laddu’s on low flame in the pan.
  • You can use food color of your choice like green etc.
  • Take out moti’s immedietly from the oil.
  • Always tap the jhara for making moti’s.

“Veg Momos Recipe with Momo chutney Recipe”







“Veg Momos” Recipe

Ingredients:
Oil to deep fry (For fried momos)
1 momo steamer

Momos filling Ingredients:
1  cabbage(grated)
2 green chili(finely chopped)
1 teaspoon coriander leaves (finely chopped)
¼ teaspoon chaat masala powder
½ teaspoon garam masala powder
½ teaspoon red chili flakes
¼ teaspoon black pepper powder
2 onions (grated)
1 teaspoon grated ginger
Sat as per your taste

Dough Ingredients:
1 cup all-purpose flour(maida)
Pinch of baking powder
3 -4 teaspoon refine oil or ghee
Salt as per your taste
Cold water(as required)

















Step by step procedure:

Prepare dough

Step-1 Take bowl, add maida, ghee, baking powder and salt Mix everything very well.

Step-2 Add cold water and knead the dough very well.

Step-3 Keep aside dough for 30-40 minutes in a warm place.
Prepare momos filling
Step-1 Take large bowl, add all the filling ingredients listed above.
Step-2 Now mix everything very well.
Step-3 Remove excess water of the filling, by using both hands.

Prepare veg momos
Step-1 Take out bowl of dough. Now take small part (big lemon size) of dough.
Step-2 Apply oil on the surface, now with the help of rolling pin roll it in shape of thin  puri.

Step-3 Now add 1 large teaspoon of filling on the puri and close the puri by using your hand, making folds in momos. Prepare all. Put all momos on greased plate.
Step-4 Take containers of momo steamer and apply oil all around on the surface. Now put momos on it.  
Step-5 Heat momos steamer, add water up to desired level. When water is hot then put momos container on it and cook it for 10 minutes on medium flame. Check it if it is cooked properly.
Serve it hot with momo chutney..

Prepare Fried momos


Step-6 Heat deep fry pan, add oil to deep fry. When oil is super-hot then add 3-4 momos at a time and switch the flame to medium to low. Fry it well. Similarly prepare all momo’s.

 When done, enjoy it with chaat masala, momo chutney(recipe below), green chutney, tomato catch-up and tea.

Tips:

  • Make sure to keep flame low to medium flame while frying momo’s.

 2 Tomatoes
2-3 Red chili
salt as required
1/4 teaspoon cumin seeds
3-4 garlic pieces
1 piece of ginger
1 green chili(optional)
Water if required

Method:

Take mixer grinder,put all the ingredients listed above, now add litltle water if required. Add salt.Enjoy the chutney with momos.
