“Aam Murabba”

“Aam Murabba” Recipe

Ingredients                             
4-5 Green Raw mangoes (kacha aam)
1/2 kilo powder sugar
2 teaspoon fennel seeds
2 teaspoon ghee
1/4 teaspoon kalonji
½ teaspoon ajwain
½ teaspoon coriander powder
2 teaspoon red chili powder

                          
                                                  
                                       Step by step procedure:

Step-1 Peel raw mango, then cut it into pieces and wash it.
Step-2 Take big bowl, put all mango's into it and add sugar into it. Now mix it very well. Keep it over-night.

Step-3 Heat deep fry pan, add ghee into it.
Step-4 In a grinder, grind fennel seeds, ajwain, into coarsely grind powder.
Step-5 Now add the powder into the pan and fry it in the ghee for few seconds.
Step-6 Now transfer all pieces of mangoes deepen with sugar into the pan.
Step-7 Mix everything very well. Cook it very nice with continuous stir.
Step-8 Cook it until sugar syrup is reached to string stage properly.
Step-9 Now take tava, add coriander powder, fennel seeds and ajwain into it. Fry it for few seconds.
Step-10 Transfer the mix of tava and few kalonji into the pan. Mix everything very well. Now transfer it into a bowl and let it cool completely.
Enjoy it with roti or any bread.

Tips

  • Make sure that aam is completely cooked.

  • Sugar syrup should be cooked nicely.

  • Don’t add too much masala like ajwain, kalonji, coriander powder etc.
