How to make SOFT ROTI (With all possible Tips, Do’s & Don’ts)” Recipe

                                                 METHOD-1
Step 1-Always make soft dough (with just using lil more water) for soft roti.Try to use hot water.
Step 2-Then must keep it covered & at rest for at-least 5 minutes.
Step 3-Always make roti on medium flame. On soft flame roti will not cook well and on
high flame it will become hard.


                                                      METHOD-2

Step-1 ADD 1 TEASPOON of fresh curd while kneading for getting very very soft roti.
Step-2 Then must keep it covered & at rest for at-least 5 minutes.
Step-3 Always make roti on medium flame. On soft flame roti will not cook well and on high flame it will become hard.


                                                    METHOD-3
Step:1-ADD 1/2 cup milk (at normal temp) & 1/2 cup hot water while kneading for getting
very very soft roti.
Step-2 Then must keep it covered & at rest for at-least 5 minutes.
Step-3 Always make roti on medium flame. On soft flame roti will not cook well and on high flame it will become hard.


               
                 Tips with all possible Tips, Do’s & Don’ts:

Note:
  1-Always sift the flour well.
  2- Add all the ingredients by making well in the middle.
  3-Knead the dough well (so that gluten is formed) i.e till it get smooth & silky.                                                                                                                                                 
  4-Always use fresh dough for getting soft roti.
 5-Kneading the dough using hot water makes it very very soft for long hours. Be careful
  With hot water, first use spoon to mix it.
6-Sometimes you can add 1 teaspoon of ghee and salt to make soft roti.
7-After making roti, apply ghee and then keep it covered for long time use.
8-Divide the dough into equal sized smooth balls.
9-Keep all the roti wrapped in soft cloth and put it in casserole.
10-Try to use minimum amount of dry flour for dusting, if using more dry flour, roti will become lil hard.
11-Cook the first side only for 2-3 seconds, as we will finally put that side on direct flame & other side for 4-5 seconds then transferit to direct flame with first side down.
12-Rolling the roti ball with low pressure and rolling roti  uniformly to all the sides is very important.

In Mahabharata,we all know that PANCHAMRIT was very important drink(bcz, who had drink it will become immortal forever) that emerged during Samundra manthan.As the name says 'PANCH"..it is made of Main five Ingredients(listed in the Recipe below) and rest of ingredients are added now a days just to enhance taste of it...
During lots of religious Hindu Pooja and celebrations Panchamrut- Charnamrit is offered as a bhog to god and then distributed as a prasad. Zayka~with POOJA is providing you a proper way of preparing Panchamrit in Your home.

First five main ingredients for panchamrit
* 1 cup Fresh Curd (beaten dahi from cow milk, CURD represents prosperity & progeny)
* 1 cup powdered sugar (for sweetness & bliss)
*1 ½ cup Cold cow Milk (cow is worshiped by Hindus as mother,MILK represents Purity & Piousness)
*¼  teaspoon honey (has the healing power, HONEY represents sweetness in speech & unity)
*½ teaspoon melted deshi ghee (ghee is consider as a food of gods,GHEE represents Knowledge & victory)

Other optional ingredients (to enhance taste as well as to use it in puja) for panchamrit are:
* 3-4 Basil leaves (chopped, tulsi leaves)
* 3 teaspoon chopped makhana
*¼ teaspoon gangajal
* 1 teaspoon grated dry coconut
* 1 teaspoon chiraunji
*¼ cup cold Water(if you like thin consistency)








Let's start making Panchamrit at home...




               
                                     Step by step procedure:

Prepare Panchamrit or charnamrit:

Step-1 Take big bowl, add beaten curd. Now add powdered sugar into it and mix it well.
Step-2 Now add milk into it and mix once. Now add all the other ingredients listed above. Mix well.
Step-3 Finally keep it in freeze at least for 1 hour then serve it as a bhog to lord ganesha or use it in any festive days. You can use it as a Prasad while any puja celebration. It taste good and as it is made of panch tatva so it is very very beneficial for our Health.

Tips:
  • Use only cow milk (if making panchamrit for any puja).
  • Use cold milk as well as cold yogurt.
  • Coarsly grind all makhane in the mixer (just for few seconds).
  • Add dry coconut (grated,it taste too good).
  • Add melted ghee (don’t add refine and any other oil in it).
  • Use powder sugar (for easy mix).
  • Add water if you like thin consistency.
  • There may be certain regional variations in ingredients. Most south Indians add ripe banana instead of sugar.

Steamed Modak or Ukadiche modak is very popular sweet dish of Maharashtra. It is prepared during Ganesh chaturthi celebration.This year ganpati bappa celebration is done in my home. Ganesh chaturthi puja is also called as Vinayaka Chaturthi Puja. Worshipping Gods and Goddesses with all 16 rituals is known as Shodashopachara Puja (षोडशोपचार पूजा).
Modak is very much loved by ganpati ji and we prepare it as a bhog to lord ganesha :-)
Modak is made with rice flour and inside it filling of coconut and jaggery including dryfruits other ing too. Steamed modak are prefered during ganesh puja.
Ganesh chaturthi is a special time when family, And friends get together, for fun. Wishing laughter and fun to cheer your days, In this festive season of GANESHA Chaturthi i am very happy to share this recipe along with all the tips.

Let's start making this recipe at home...



 Ingredients


 1- Ingredients  For filling of Modak

1 Cup jaggery(gud in hindi)
1 cup grated fresh coconut
2 teaspoon deshi ghee
1 teaspoon roasted poppy seeds (khas-khas)
2 teaspoon chopped Cashew nuts
2 teaspoon chopped raisins
 ¼ teaspoon cardamom powder




2- Ingredients for modak dough

1 cup rice flour
1 cup water( or less, as needed)
1/2 teaspoon ghee
                          

         
               
                                     Step by step procedure:

Prepare modak filling:

Step-1 Heat deep kadhai, keep the flame to medium , add deshi ghee and then add slowly jaggery into it. Let the jaggery completely melt into the ghee on low flame. Keep stirring in between.

Step-2 Now keep the flame low and add fresh grated coconut, chopped dryfruits(listed above),green cardamom powder. Mix well on low flame for atleast two mins so that water gets evaporated.

Step-3 Finally add poppy seeds(roasted) into it and mix well. Switch off the flame.

Step-4. Let it cool down, transfer it in a plate to cool down quickly. 

Step-5 As it will cool down, after 5-10 mins it will become lil hard due to jaggery used in it so take all the mixture into the grinder jar and coarsely grind it for a second. Now take out the yummy filling into a bowl or container. Your modak filling is absolutely ready be used in modak.



Let’s prepare modak dough now

Prepare modak dough:

Step-1 Heat deep pan, now add water and ghee into it. Let the water become warm.

Step-2 Now add rice flour into it and mix it well for few seconds. keep the flame medium-low. 

Step-3 Now switch off the flame and transfer it into a parad or big thali to knead it well. Your modak outer cover or modak dough is ready. Let’s prepare modak now.



Prepare Steamed Modak-without using mould:

Step-1 Heat deep pan, now add water on low flame. Let the water become warm.

Step-2 Now take small portion (like that of big lemon size) of the dough. Grease your hands so that dough does not stick into your hand. Now using your fingers make it in thin puri shape. Now add 1 teaspoon filling into it and close it like making corners of it or can make of any shape of ur wish by using fingers. Similarly prepare all the modaks using dough and filling. Modak is ready to get steam.

 Step-3 Now as done in step-1, put any greased utensil (which have holes) on top of the pan having warm water. Now put one by one all the modaks. Cover the pan with lid and let the modak get steams nicely atleast for 4-5 mins.

Step-4 Take out all steamed modak into the plate. Let it cool down. Now use it in the ganesh chaturthi puja.



Tips(with all possible Do’s & Don’ts):

  • Make sure that modak dough is neither too soft nor too hard.If u find modak dough too soft then add lil more dry rice flour then knead it again. And if find hard then add lil more warm water and knead it again.
  • Make sure to knead the modak dough while it is still warm(dont let it become cool completely). Use your hands carefully.
  • You can also use momo steamer for steaming the modak.
  • Make sure to cook modak filling on medium-low flame.
  • Always use fresh coconut (grated) for making modak filling..it taste better.
  • If not using the steamed modak on same day then better to keep it in freeze for 2 days.
  • You can use modak mould (steel or plastic) for making modak in proper shape.
  • Make sure not to keep the flame on high while steaming the modaks.
  • Grease your hands well before making modak.
