“Tandoori Stuffed Masala-Naan”




“Tandoori Stuffed Masala-Naan” recipe

Ingredients


Butter (to apply on the hot naan)

naan dough  Ingredients:
1 large cup maida (all-purpose flour)
1 teaspoon oil
Cold water for kneading
½ teaspoon salt
½ teaspoon sugar
1 teaspoon yogurt
1 pinch Baking soda

Masala Filling  Ingredients:
¼ cup grated paneer
2-3 teaspoon finely grated onion
¼ cup grated cauliflower
4-5 large potatoes(boiled)
2-3 teaspoon dry all purpose flour
3-4 teaspoon Coriander leave(finely chopped)
1 teaspoon garam masala powder
½ teaspoon coriander powder
½ teaspoon red chili powder
1/4 teaspoon  cumin powder
Pinch of amchoor powder(optional)
2 green chilly(finely chopped)
¼ teaspoon ajwain (Thymol seeds)














                                      










Kitchen utensils required:

  • 1 Gas tandoor
  •  1 Spatula
  • 15 bowls
  • 1 Chopper
  • 1 cooker
  • 1 Water jug

                                                




                                        Step by step procedure:



Prepare naan dough

Step-1 Take bowl, add maida, ghee or oil, salt, sugar, baking soda, yogurt. Mix everything very well.

Step-2 Add cold water and knead the dough very well.

Step-3 Keep aside dough for 2-3 hours in a warm place.

Prepare filling for dough

Step-1 Boil potatoes in a cooker, now take boiled potatoes, mesh them. Now add all the filling ingredients in it. Add salt as per your taste.
Step-2 Make small balls out of all the prepared filling. 

Make stuffed masala naan

Step-1 Take out bowl of dough. Now take small part (big lemon size) of dough. Now with the help of rolling pin or using hands roll it in shape of puri. Now put small lemon size filling in that and close it very well. Take dry all-purpose flour and with the help of rolling pin roll it to very thin and to the desire shape. Now spread coriander leaves, chopped onion, black papper powder and ajwain on the upper part of naan(as it is masala stuffed naan). Again roll it once with rolling pin. Similarly prepare all the naan from the dough and the filling.

Step-2 


Preheat gas tandoor with covered lid on high heat for atleast 5 mins. 


Step-3 Now open the lid of gas tandoor and put naan on it, cover the lid and cook it for 2-3 mins for each sides. Open the lid of the tandoor, if naan cooked properly then take it in plate and apply butter on both sides of it… Serve hot with chole, yogurt, green chutney, tomato catch-up, vinegar onion etc..



Note: If you don’t have Gas Tandoor at home then..


Step-1 Take non-stick tava, Heat it, when tava is hot then put naan on it. Make sure to put coriander leaves side at up.


Step-2 Now spread few drops of water on upper part and then immediately cover it with transparent lid. Make flame low and cook it for few minutes.

Step- 3 Now cook for other side at low fame for few minutes. 

Step-4 When done then put naan on plate and immediately apply butter on it.



Tips:
  • Try to make thin crispy naan.
  • Do apply butter on the hot naan.
  • Adding dry maida will help to roll the naan upto more thin naan.
  • Cooking naan on non stick tava is also good option.
  • If possible use clay tandoor pot used in restaurants and dhaba for exact smell of tandoor. Gas tandoor will only provide sufficient heat, not the tandoori taste.


Here is recipe of green chutney and vinegar onion for you all:

1- Prepare green chutney

Ingredients
1/2 cup coriander leaves
2-3 green chilly
2-3 garlic cloves
¼ teaspoon mango powder
Salt and water as you prefer

Method
Take grinder, add all the ingredients of the chutney. Add water and salt as per you like. Now make fine paste out of it. Your green chutney is ready.




2- Prepare vinegar onion

Ingredients
2 small onions (cut in shape as you like)
1 cup cold water
2 teaspoon vinegar
Salt as per you like

 
Method
Take onion. Cut it into shape as you like. Dip it in cold water for 5-6 minutes. Now remove water and then wash it with normal water. Take it in a bowl. Add vinegar, salt. Mix it well. Keep it aside for 3-4 minutes. Vinegar onions are ready.

“Steamed Masala Fara & Plain Fara”









“Steamed Masala Fara & Plain Fara” Recipe

Ingredients:

2 Cup Rice four
½ cup lal masur dal(soaked in water for 20 mins)
Water as needed
1 steamer
1 teaspoon oil(apply in steamer)

Fara masala filling Ingredients:
1  teaspoon coriander seeds
3-4 green chili( chopped)
5-6 Black Pepper seeds
8-9 garlic clove
1 green cardamom
1 teaspoon turmeric powder
1/2 stick cinnamon
Sat as per your taste

Fara Dough Ingredients:
2 cup Rice flour
Water (as required)

















Step by step procedure:

Prepare Fara dough

Step-1 Take deep fry pan, heat it, add at least 1 cup water, let it boil once. Now add rice flour and mix it with spatula. Add more water if required to get nice binding of water with rice flour.
Step-2 When done, off the flame and transfer the mix into big bowl. Knead the dough and keep it for rest for at-least 5 mins.
Step-3 Keep aside dough for 30-40 minutes in a warm place.

Prepare  Masala fara filling mix
Step-1 Remove excess water from soaked lal masur dal and make coarsely grinded paste in a grinder.
Step-2 Make fine paste of all the masala ingredients (don’t use excess water) listed above in a grinder.
Step-3 Now mix the masala paste with lal masur dal paste. Add salt as required.

Prepare Steamed fara (masala fara & plain fara)

     1-Steamed masala fara ( by 2 method)



                                                 Method-1
Step-1 Take out bowl of dough. Now take small part (big lemon size) of dough.
Step-2 Apply dry rice flour on the surface, now with the help of rolling pin or by hand roll it in shape of thin small puri.
Step-3 Now put 1 teaspoon of filling into the puri and fold it. Prepare other masala fara like that.
Step-4 Now put all the prepared masala fara inside the steamer plate and let it cook on medium flame for 5-6 mins. Check it if it is cooked properly.

Step-5 Take them out on plate and let them cool down then keep them in container with lid.

                                                    Method-2    
Step-1 Take out bowl of dough. Now take small part (big lemon size) of dough.
Step-2 Apply dry rice flour on the surface, now with the help of rolling pin, roll it in shape of thin  big roti.
Step-3 Now spread good amount of masala filling on roti and just fold it. Prepare other masala fara like that.
Step-4 Now put all the prepared masala fara inside the steamer plate and let it cook on medium flame for 5-6 mins. Check it if it is cooked properly.

Step-5 Take them out on plate and let them cool down. Now cut them simply using knife. Keep them in container with lid.






2-Steamed plain fara

Step-1 Take out bowl of dough. Now take small part (big lemon size) of dough.

Step-2 Apply dry rice flour on the surface, now with the help of your hand roll them in shape like thin stick with both side pointed(as shown in picture). Prepare other plain fara like that.

Step-3 Now put all the prepared plain fara inside the steamer plate and let it cook on medium flame for 5-6 mins. Check it if it is cooked properly.

Step-4 Take them out on plate and let them cool down then keep them in container with lid.

Note- you can enjoy this traditional fara in two ways..

1-    Eat the prepared fara(masala as well as plain) with gravy sabzi as a lunch menu.

2-    Fry all fara using 2 teaspoon ghee and green chili(as per u like) till nice crunchy. Enjoy this style with tea.
Both ways of eating are just perfect..yummy.. but fried one is awesome :-)



Tips:

  • Make sure to keep flame low to medium flame while using steamer.
  • Avoid using excess water while preparing masala for fara.
