“Moong Dal-Namkeen Khasta Kachori” Recipe

Kachori is very delicious snack and loved by every age people in India. This recipe is generally made with maida. In India you can get variety of kachories like… moong dal kachori, matar kachori, or simple kachori etc. Today I have planned to share Moong dal namkeen kachori recipe with you all. This becomes very tasty if filled with perfect blend of moong dal namkeen and other masalas. Generally everyone use moong dal and soak it in water, here to give more taste I had replaced moong dal with moong dal namkeen( I used Haldiram). If u wish, u can use moong dal(first soak it in water for at-least 1 hour or so) instead of using its namkeen. Masala ingredients will be same for both. With lots of trial for kachori and its masala ingradients, now I got perfect one…very very tasty and cruchy…come soon…join me…now have a look on its ingredients.


Ingredients:

Oil to deep fry 

Kachori Dough Ingredients:
1 cup all-purpose flour(maida)
¼ teaspoon green color or any other color(optional)
Pinch of baking powder
½ teaspoon ajwain (carom seeds)
3 -4 teaspoon refine oil or ghee
Salt as per your taste
Cold water(as required)

Kachori Filling Ingredients:
1 cup moong dal namkeen(Haldiram)
1 teaspoon fennel seed
1 teaspoon red chili powder
1 teaspoon coriander powder
Salt as per your taste
1 teaspoon oil
1 teaspoon chaat masala powder
½ teaspoon garam masala powder






                                     















  





  
 Kitchen utensils required:


  • 1 non-stick pan (I prefer: Vinod Zest Non- Stick Friendly Pan)
  • 1 Mixer-grinder( I prefer: Prestige Hero 550- Watt Mixer Grinder)
  • 1 Spatula (I prefer: PINDIA Wooden Curved Spoons)
  • 12 bowls (I prefer: Borosil Mixing Bowl)
  • 1 Water jug







Step by step procedure:


Prepare dough

Step-1 Take bowl, add maida, ghee, baking powder, cocor, salt and ajwain. Mix everything very well.

Step-2 Add cold water and knead the dough very well.

Step-3 Keep aside dough for 30-40 minutes in a warm place.


Prepare filling

Step-1 Take deep fry pan, heat it, add oil, when oil is hot then add fennel seeds, salt, chaat masala, garam masala powder, coriander powder, red chili powder and mix everything very well. Cook it for just 1 minute.
 Step-2 Now add mong dal namkeen into the mix and then coarsely grind the mix in a grinder.


Prepare moong dal namkeen Khasta kachori
Step-1 Take out bowl of dough. Now take small part (big lemon size) of dough. Now with the help of rolling pin roll it in shape of puri. Now put small lemon size filling in that and close it very well. Now with the help of rolling pin roll it to the desire shape and size. Similarly prepare all the kachori’s from the dough and the filling.
Step-2 Heat deep fry pan, add oil to deep fry. When oil is super-hot then add 2 kachori’s at a time and switch the flame to low. Cook it from both the sides. Similarly prepare all moong dal namkeen kachori’s.
 When done, enjoy it with green chutney, chaat masala, tomato catch-up and tea.

Tips:

  • Kachori's if cooked on high flame then it will not cook from inside so make sure to cook kachori's on low flame.
